Hey food truck nation!

Here at FTG, we love it when a food truck has options for all different diets! This week, we had the pleasure of meeting up with Fernando Gomez, the proud owner of Root N Seeds at the Proyectotulum. He is creating some seriously delicious vegan friendly and non-vegan dishes in the Wynwood area. We have noticed an increase of demand for vegan friendly meals and are so happy to highlight Root N Seeds on their journey!

About ten months ago, Fernando moved to Miami, FL from New York with his family to make his dreams of creating his own dishes a reality. Back in NYC, he worked for a number of different fine dining restaurants and catering companies and was never able to inject his own creative cooking styles in the foods he would make day in and day out. Three months after moving to Miami, Root N Seeds opened their food truck doors to the public. Here, he has the creative freedom to play with different flavors and spices to serve Miami some ridiculously tasty dishes! Bottom line is that Fernando is more interested in the quality of the food he is serving versus the profit he is going to make at the end of the day.

Even though Fernando is not a vegan himself, we had to find out why he started his food truck as predominantly vegan. He was interested in making vegan friendly meals because he knew the demand for vegan options was increasing rapidly and the supply was low. He wanted customers to be able to come to the bar and order food from his food truck no matter what their diet restrictions are. Creating vegan friendly dishes are all about using your imagination and different ingredients to create something completely plant based. For example, one of their bestselling vegan menu items is their Tostone Tempeh Sandwich. This sandwich uses the fried tostone as the bun in a burger, buffalo flavored vegan sausage, topped with their homemade coleslaw and fresh guacamole.

Fernando is constantly being inspired everyday with different flavors to create dishes never made before. He is always looking for ways to improve recipes, add exciting and new flavors and bringing the crazy ideas in his head to life. We got the top menu items you should definitely try the next time you are in the Wynwood area. First is their Falafel Burger. This vegan friendly option is full of flavor and innovation. This falafel is not your traditional falafel; Fernando used different beans and actual seeds to create this delicious burger which he servers on a toasty bun, with fresh veggies and their signature house sauce. The next is not vegan, but is like nothing we have seen before. Their Black Burger is something worth trying to say the very least! The buns are homemade with squid ink, yes you read that correctly! He tops the burger patty with seared provolone cheese (or provoleta), caramelized onions and their signature house sauce.

In the future, Fernando hopes to open a stationary restaurant where customers can come and enjoy his not so traditional and tasty dishes. He has the best support system at home with his wife and two children cheering him on every day to continue to make his dreams a reality.
