Hello food truck nation!
The doctor is in…The Wich Dr. that is! Chef Steven Harmon is the proud owner of The Wich Dr. and he is serving some of the wildest sandwiches in the South Florida area using locally sourced ingredients. We met up with Steven to find out just what makes his sandwiches so different.
Let’s rewind to when Steven started cooking. He attended Le Cordon Bleu where he learned the foundation of all things cooking. He began his career in the culinary arts by working his way up from casual/fast dining to fine dining. Steven was an executive chef at some of the best restaurants Miami has to offer, but knew he wanted something more, something his own. He wanted something where he could interact with his customers while preparing their food. So, he decided to open up his very own food truck.
We of course had to ask, “Why sandwiches Steven?” He wanted to enter the food truck industry doing something with minimal competition, but that was limitless. Sandwich options are endless in that they can be fork and knife, open-faced or even deconstructed sandwiches - the possibilities are endless! He prides himself on having a seasonal menu, meaning he changes the menu at least once every three months.Side note, the fan favorites will always remain on the menu. Sloppy Poppy we're looking at you! Then came the biggest decision of them all, how to name this gourmet sandwich food truck… Many deliberate for weeks or even months, but for Steven it came to him one night in his sleep and the rest was history. Steven was lucky enough to have his tattoo artist, Juan Gonzalez from Motion Tattoo, design his logo.
Although The Wich Dr. opened a just over two months ago, Steven is quite proud of the opportunities that have come their way thus far. One of them was the chance to participate in the F1 races in Bayfront Park in Miami, FL. Thanks to SWARM, he’s had many doors open for him within the catering world for several local events which were successes. All of these accomplishments wouldn’t be possible without the help of Steven’s team. Javier Diaz and Carlos Laherra are both chefs who have worked at top-notch restaurants in Miami who decided to join The Wich Dr. team. Rest assure food truck nation, while Steven may be at a catering event, there will always be a chef at The Wich Dr. ready to conjure up your next gourmet sandwich.
Let’s get to the meat of this blog… The food! We had to get some options for you to try the next time you decide to stop by The Wich Dr. Steven’s top three sandwiches are the Korean BBQ Beef Brisket, Salmon Burger and the Sloppy Poppy. While vising Steven,we decided to try their Korean BBQ Beef Brisket and it was indeed out of this world! This sandwich is an Asian/Hispanic fusion like nothing you’ve ever tried before. The beef brisket is slow-roasted to perfection for a whole 14 hours. It is then placed in a toasted brioche bun, topped with a tangy Kimchee slaw and drizzled with their signature ginger-sesame aioli.
